Chocolate Chip Cookies – Healthier Version
Ingredients: What has been changed
100g margarine - Used margarine as it has less saturated fat so is better for
your heart.
1/2 cup brown sugar - Cut down on the sugar and added dried fruit for natural
1/2 teaspoon vanilla essence
1/3 cup chocolate chips - Decreased the amount of chocolate chips as they are high in fat and sugar.
1/2 cup dried apricots - Added dried fruit as they contain natural sugar + vitamins.
1/2 cup wholemeal flour - Added wholemeal flour for extra fibre.
1/2 cup white flour - Decreased amount of plain flour as it is low in fibre.
1/2 cup rolled oats - Added rolled oats as they are a great source of fibre.
1 teaspoon baking powder
Set the oven to 180ÂșC.
Cream the margarine and sugar together in a bowl until thick and creamy.
Add vanilla and mix through.
Add chocolate chips and dried apricots, mix well.
Add sifted flours (return husks from wholemeal flour to the bowl), oats and baking powder and mix until well combined.
Lightly grease a large oven tray.
Roll the mixture into balls - it's quite a crumbly mixture but it will come together.
Arrange on a tray, allowing space for mixture to spread.
Press down with a fork, holding onto the sides of the ball to prevent it crumbling.
Cook for 10-15 minutes or until lightly browned on top but still soft in the middle.
Allow to cool for a few minutes on the tray before removing to a wire rack.
Cost: $3 to make 16 biscuits.
